We've spent a fair bit of time "posturing" (or so our opponents may think, but really, we just went to the can and forgot to sit out) with our queens in EP, and when we raise and get one caller, the villain who's running 6/3 over 30 hands open-shoves a 10K stack.  Crying fold, right?

If you have a read on villain as a rock, then yeah crying fold seems logical. What else could he have here other then Aces or Kings if he is that tight and pushing? Tough spot for you sure, but what is the worst that happens here? You lose 700 chips rather then possibly your stack? I'd say it's easily worth the disciplined fold.

Yeah.  Not to mention my pot odds aren't that far from 1:1, and Pokerstove would say I'm a huge dog against his range.

Pretty much.  That nagging bit of doubt due to circumstance doesn't really change much.  Your sample on him is small and your play may look a touch unusual, but you still have to give credit here without knowing more.  If he's as nitty as he looks, you're still pretty crushed vs. range and he's not likely playing back for stacks unless he's dying for a call.
